How to make salt and pepper chicken

Salt and pepper chicken can be enjoyed both as a snack or as a main course, depending upon your preferences. This dish is very similar in preparation to Chilli chicken.

Salt and Pepper Chicken Ingredients

  • 250 gms Boneless chicken leg, cut into 1½ inch thin strips
  • Salt to taste
  • 8-10 Black peppercorns
  • Sichuan peppercorns
  • 1 and a 1/2 tsp Sesame Oil
  • 1 egg 1 tablespoon of oil + for deep-frying
  • 2 tbsp Cornstarch
  • 2 tbsp Potato starch
  • 1 tbsp chopped garlic
  • 2-3 Red bird eye chillies, finely chopped
  • 1 small Onion, Finely Chop
  • 1/4 cup Finely chopped mixed capsicums (red, green, and yellow)
  • Two pinches sugar
  • 1 and a 1/2 tsp Sesame Oil
  • Fresh spring onion greens chopped for garnish

Put the chicken strips in an oiled bowl. Add salt and sesame oils.

Take the egg yolk and place it in a bowl. Mix together egg yolk and 1-2 teaspoons eggs white. Allow to marinate in the refrigerator for about 10-15 minutes.

Heat enough oil in a saucepan.

Mix cornstarch and potato flour into the marinated chicken strips, and then mix until well coated.

Heat oil in a large skillet and fry the chicken strips until golden brown and crispy. Drain on absorbent tissue.

Combine black peppercorns and siezuan peppercorns in the mortar. Use a pestle to grind them into a fine powder.

In a nonstick skillet, heat 1 tablespoon oil. Add garlic and red bird eye chillies sauté for 1 minute.

Add onion and mixed capsicums and sauté for 1 minute. Mix in sugar, salt, and sesame oil.

9.

Drain the fried chicken strips into the sautéed onion mixture and mix. Mix in crushed peppercorn powder and mix well.

10.

Serve hot, garnished with spring onions greens.
